| Middle Eastern‑style Shakshuka or Andalusian Huevos a la Flamenca |
Try this Middle Eastern‑style Shakshuka -or its Andalusian cousin, Huevos a la Flamenca - for a vibrant, flavor‑packed Sunday brunch.
They share plenty of similarities, but whatever name you prefer, this is my take on the classic. It’s a hearty mix of waxy white potatoes, sweet bell peppers, and aromatic spices simmered in a rich tomato base, finished with gently cooked eggs and a scatter of fresh herbs.
An easy dish make-ahead dish with just the right amount of chili warmth - you'll never eat eggs on their own again after trying this!
Ingredients: (serves 4)
- 1 onion, peeled and finely chopped
- 2-3 cloves garlic, crushed
- 1 red or yellow bell pepper (capsicum), seeded & diced into small chunks
- 2 tbsp olive oil
- 2 bay leaves
- 1.5 tsp ground cumin
- 1.5 tsp ground coriander
- 1/2 tsp ground chili powder
- 1/2 tsp salt
- 1/2 tsp ordinary granulated white sugar (helps bring out the flavors)
- 400gm can plain chopped tomatoes & juice (cheapest)
- 2-3 medium waxy potatoes, peeled & diced into small chunks
- 1.25 cup vegetable stock (use instant if that's what you have)
- 1.5 tsp fish sauce
- Juice of 1/2 a medium lemon
- 1-2 eggs per person
- Fresh chopped parsley to garnish
Method:
Heat oil in large skillet on medium-high heat.
Fry onions, garlic and bell pepper (covered) until lightly browning.
Peel and cube potatoes, add to mixture and fry (covered) for 5-7 minutes until lightly browning, turning occasionally.
Add canned tomatoes, ground coriander+chili+cumin, bay leaves, stock, fish sauce & lemon juice.
Turn heat to medium-low and allow to simmer uncovered for 10 minutes until sauce thickens.
While the sauce is thickening, fry eggs in a separate skillet using egg rings to keep the whites contained and thick. Do not baste, try and keep the tops of the yolks soft and yellow.
Plate the spicy potato mixture onto warmed plates (a short burst in the microwave will do it) and gently place eggs on top. Garnish with fresh chopped parsley and serve.
